Chocolate Pumpkin Pie Bar


Hmm....what to tell about this recipe.....I made this during the Halloween month and could not post it, now I got time to post it. Anyways, this is a pie bar recipe which can be eaten any time of the ear, or can be eaten even after Halloween, as you can make this using the leftover pumpkins. :) I got this box mix from the store and loved it, it was very new to me and it tasted so good too.



Ingredients:
-----------
1/4 cup Semi sweet Chocolate Chips
1 box Pumpkin Pie Bar mix




Method:
---------




1. Mix and bake according to the package instructions. Later when the pie is almost baked add the chocolate chips over the top and finish baking. This recipe is so simple and easy that can be made instantly and tastes so good.


2. Allow it to cool and cut to bars or any desired shape.

Mixed Berry Cake (Strawberry, Blueberry, Blackberry and Raspberry)


I go crazy when I see these fully colored berries during the winter. They are so sweet and very colorful and very tasty during the winter. I got all the berries strawberry, blueberry, blackberry and raspberry and wanted to make something for Anush. The only thing that I can make that he likes is a cake, but I cannot use the whole ones, as he would not like to eat it that way, so wanted to hide all the berries into the cake. What better way to make a cake with hidden berries....hmm...then I just thought I need to make a puree of it. Yes, I made this cake and he liked it very much, that really makes me happy. :)



Ingredients:
------------
3 cups Self Raising flour
2 cups Granulated Sugar
3/4 cup Vegetable Oil / Unsweetened Apple sauce
1 1/2 cup pureed Berries (I used Strawberry, Blueberry, Raspberry and Blackberries all 1/4 cup)
1 tsp pure Vanilla Extract
4 Eggs, beaten ( I substituted two eggs with (3tbsp Falxmeal + 5 tbsp water = 1 Egg), so you need to multiply the amount for substituting two eggs)



Method:
-------------
1. Preheat oven to 350F.



2. Spray with cooking oil/butter spray on cake pan/or any baking dish, and sprinkle flour all over and shake off the excess by tapping.




3. Meanwhile, beat the eggs with hand mixer/stand mixer until it's light and fluffy and the color of the eggs should have turned pale color along with the flax meal and water (along with the eggs) for about 4-5 mins.




4. Now add the rest of the ingredients first the wet ingredients and then the flour combine again with a hand mixer/stand mixer until you get a smooth non-lumpy batter for about 3-4 mins.



5. Pour this batter into the baking pan and bake it for about 26 to 28 mins or until the top is slightly golden and if a toothpick or skewer inserted comes out clean.



6. Transfer the cake on a wire rack and let it cool.
(Note: You can add whipped cream on top mixed with mixed berry jelly/preserves/jam to make it extra rich)

Soy Flour Pineapple Cake - Healthy and Gluten Free


I always wanted to try something different with cakes. This time I decided to make flour less cakes, this being the second one. My first experiment was a hit with Almond Honey Cake, so wanted to try now with soy flour. This cake too turned out so good and tasty. I added pineapple because Shoj likes pineapple a lot and I thought if it does not turn out good, then he would eat it at least because of pineapple.:) But he liked it!

Ingredients:
------------
1 1/3 cup Soy Flour
2 tsp Baking Powder
1/2 cup + 2 tbsp Brown Sugar
1 can of Pineapple slices with Syrup (pineapple juice)
2 Eggs
2 tsp Oil
(Note: You can substitute 2 Eggs + 2tsp Oil = 4 Egg Whites)
2 tbsp Yogurt or Soy Yogurt

Method:
---------
1. Preheat oven to 325F. 
2. Line baking cups or pan with parchment paper.


3. Remove the pineapple slices from the pineapple juice and cut the pineapple slices into small pieces.
(Note: You also use apples instead of pineapple, or you can also crush the apples/ pineapple in a blender - I wanted it to be chunky so did not use or crush the pineapple)
4. In a large mixing bowl combine flour, baking powder and sugar and mix well.


5. In another bowl mix the wet ingredients i.e., eggs, oil, yogurt and half of the pineapple juice from the can. Mix well and add this mixture to the flour mix and combine it with a hand mixer until well blended.


6. Now add the pineapple pieces and with a wooden spoon or spatula mix the batter gently.


7. Pour this batter into the prepared cups or pan and bake it for about 45 mins.
(Note: As there is no flour in this cake mix, we need to bake this cake in a medium oven and for longer time so that the flour will not burn and will cook properly).

Mickey Mouse Car on Road 4 Cake - Anush's 4th B'dy

This time again I wanted to experiment on Anush's birthday cake....I was thinking about this for a long time, but never planned for the design as I always do.
After I posted on Anush's birthday, I started getting sick because of sinus, that made me tensed as to whether I would be able to do this cake or not, but I did take some medicine and to my surprise this cake turned out to be awesome. I made this cake for the party that I planned, but on his birthday, I didn't have much patience so I did a small cookie cake. Then in the evening one of our friends arranged a surprise birthday party at her house for Anush, I was so thankful for them to do that...because the whole day I was feeling bad that I did not make anything special for him. So this time he had 3 cakes for his birthday....this makes me so so happy.

So here are the 3 cakes.....

2. Mickey Mouse on Road 4 Cake - Party Cake

For this Cake I used moist dark chocolate, french vanilla and butter cake mixes combined to form a marble cake, with whipped cream icing, mickey mouse clubhouse toys, (green, blue and black) color spray, black sugar sprinkles, white butter cream icing to write "happy birthday", and made yellow fondant letter for name "Anush".
First I made 3, 1/4 sheet cakes and one loaf cake, then combined two of the sheet ckaes to form the base, then cut out the remaining 1/4 sheet cake and loaf cake to get the shape of 4. when the cake work was complete, I first covered the base with whipped icing, then placed the 4, then covered that too with icing, then sprayed green, blue and black color spray. Sprinkled black sugar on top of the 4 shaped cake to look like road. Then marked with white butter cream icing to divide the road. With the same white butter cream icing wrote "happy birthday" and rolled the yellow fondant to shape letters for name "Anush". Then finally placed all the toys, candles and palm trees. This completes the cake! :)

Chocolate Cup Strawberry Dessert - 5 mins Wonder with 3 Ingredients - Party Pleasure


I saw these cute chocolate cups with different shapes in fresh market store and grabbed it at once. I kept in my fridge to think of a dessert which would be easy and kids favorite, but for almost 2 weeks I was busy and could not make one.


But today I had time and Anush was so excited when I told him about this dessert and he agreed to help me and wait until I finish with my clicks. I know poor guy....had to control himself until I took the pics....and he ate all of these....I had to beg one for me and one for Shoj, but he gave it finally. :) It was fun making this and eating too!! Very nice elegant dessert which can be done in minutes and can be served easily for a crowd or in a party.

Ingredients:
--------------
Chocolate Cups (I used square, round and oval shape)
Cool Whip
Fresh Strawberries (stem removed and washed)



Method:
-----------

1. Arrange the chocolate cups in a serving platter, add a dollop of the cool whip and place a strawberry or any other berry or fruit you want to use. You can also use food color to make colored whipped cream.


(Note: This is a very simple dessert, you can use any filling or topping as per your imagination and creativity.)
