Mini Dark Chocolate Cups with Dry Fruits and Nuts


I have sweet tooth, especially to much on right after any meal, mostly after lunch or dinner. I always keep dark chocolate to satisfy my cravings after meal. Sometimes, when am at office, I just feel that these cravings sit on my head, when I don't have much work to do. I consider this as a guilt free snack.


I second reason for me try this delicious mini chocolate, is that I wanted to sneak some dry fruits and nuts which my son does not like. He does not like date or fig. After I made this, he did try but he could make out that I added these two dry fruits, but somehow I managed to convince him to eat. :)




Method:

1. Preheat oven to 350 F, place the chopped nuts on a baking sheet and toast it for about 7-8 mins. Let it cool.


2. In a large microwave safe bowl, add dark chocolate chips and whipping cream, first microwave for about 30 secs, then mix it, then microwave for again 20 secs, then gently mix it, microwave it again for 20 secs, mix it again, again microwave for 10 secs, mix it, again 10 secs.


NOTE:
* After each time you remove from microwave and mix the melting chips, make sure that u don't melt way too much that the chocolate burns.
* When the chips are almost or 3/4 melted, you must stop putting back to the microwave, instead keep mixing it so that rest of the chips will melt.
* The time depends on the microwave and the chips you use.


3. While the chocolate it little bit warm and getting to harden, add the toasted nuts and dry fruits, and mix well.




4. After it hardens, scoop small amounts, spoon full and scoop out to a mini muffin cups.


5. Allow it to harden completely, if required put it in fridge.


6. Enjoy these as a healthy snack or a best alternative to satisfy your sweet cravings.
